Vintage: The 2007 vintage has been touted as a spectacular vintage in Napa Valley just after fermentation was complete. The growing season was very similar to 2004 with early budbreak and a warm, dry year. Temperatures moderated at harvest and the grapes were picked under ideal conditions. The grapes were small and concentrated due to the lack of soil moisture. The Shooting Star Vineyard in Pope Valley is known for its warmer, continental temperatures with little summer fog. Perfect conditions for growing fully developed Cabernet Sauvignon.
Tasting Notes: The calling card of this great vintage is the depth and richness of the wines, while still maintaining a smooth and silky texture, without being too extracted or overripe. The wines balance the luscious Napa Valley fruit and the elegance of a wine with intense history. The wine is full of depth and complexity with typical Napa Valley Cabernet characteristics. The aroma is very fruit forward dominated by the blackberry notes, and underlying cassis and anise. The mouthfeel is deep and rich with plenty of big tannins for cellaring.

Vineyards: Salva Tierra, which translates as “salt of the earth”, is named after Virginia Salvatierra, Denise Renteria’s mother. Raised on a coffee plantation in Costa Rica, Virginia reared Denise with deep respect for the land. Salva Tierra, the wine, is crafted from a similar respect for terroir. The grapes from Shooting Star Vineyard have tannins that give the wine depth and finesse, and soften the wine, bringing out its elegance, and making the wine drinkable at an early age.
